Warm & Cozy Chicken and Vegetable Soup

With the chilly weather settling in, I've been craving something warm and comforting that still keeps things healthy. Your advice about making a soup got me thinkingβ€”what better way to tackle the cold than with a nourishing, delicious soup?

Soup seems like the perfect solution to staying cozy while loading up on veggies to keep us feeling satisfied and full.

Ingredients

 2 tbsp extra virgin olive oil 

1 medium white onion, finely chopped

2 cups of chopped carrots

1 cup chopped celery

2 cups chopped yellow squash 

2 gloves of garlic, minced

4 cups chopped Napa cabbage

2 - 32oz low sodium chicken or vegetable broth

1 cooked rotisserie chicken shredded or 4 cups cooked chicken 

Salt and pepper 

Instructions

 Heat a large pot over medium heat. SautΓ© onion, celery, and carrots, stirring occasionally, until they begin to soften, approximately 4-5 minutes. Add garlic and cook for an additional minute until it becomes fragrant.

Once the vegetables have softened, incorporate shredded chicken and broth into the pot. Cover it and bring the mixture to a boil. Upon boiling, reduce the heat to medium and let it simmer, stirring occasionally, until heated through, which usually takes about 5 minutes. Take the pot off the heat and season the soup with salt and pepper according to your taste preferences.
