Populaire Modern Bistro

Located in the most luxurious and largest shopping center on the West Coast, Populaire Modern Bistro is making waves in the restaurant and foodie community alike. Featuring classic French bistro staples with a modern California twist, the distinguished, mouthwatering menu is sure to satisfy. I’m thrilled to share my experience along with my husband, Brent, of our recent visit to Populaire Modern Bistro. We indulged in a few of their most ordered, delectable dishes. 

 Located in South Coast Plaza on Level 2 in the Saks Fifth Avenue wing, co-owners Nick Weber and Ross Pangilinan have combined their talents together to create the increasingly popular restaurant known as Populaire. While Chef Nick’s wife, Amber Weber, contributes to the beauty and charm of the interior design, Chef Nick is the brain behind the culinary masterpieces that leave the kitchen and grace the tables of eager customers. 

 When we were greeted and escorted to our table, I immediately noticed the beautiful decor. Amber Weber explains: “We wanted the feeling of that quintessential cozy street corner of a beautiful French Bistro, but with our own special touches and personality - gorgeous but edgy. In one corner you might notice our Ramones art, Elvis Presley whisky decanter, Chris Farley candle, Beastie Boys poster or the many fun pictures of French models and moments in time. It’s a reflection of us, and that’s what we always dreamed of. We aren’t French but Nicks’ food and techniques echo the culture, so we wanted to create an environment that we would be magnetized to. We feel at home here...literally, I think we’re here almost every day!”

 The quirky vibe adds to the entire experience. So whether your dress code is casual mall meandering style, or straight from a business meeting in suit and tie - come as you are to enjoy some hors d'oeuvres, a critically acclaimed entree, or a dangerously delicious dessert. No matter what, anyone will feel at home here. 

 Favorite Menu Items to Try

 Not Your Mom’s Fried Chicken - The first “small bite” we tried was the fried chicken with Royal Ossetra Caviar atop, creamy labneh, and chives to garnish. Move over Chick-fil-A, I found my new craving! It’s worth the small splurge. Populaire’s modern take on this classic comfort food is elevated with the finest caviar for a delightful spin.

 Fancy French Onion Soup - If you love French onion soup like we do, ordering the Onion Soup Toast is an absolutely must. Be prepared for your taste buds to be shocked and forget everything you “knew” about French onion soup. Chef Nick’s unique rendition will excite your palate and satisfy you to the core. With a bit of crunch to the toast, the flavors are so rich you may want to hold off from ordering a decadent entrée. Definitely the type of dish to share with a friend or just eat as an entire meal if dining solo. 

 Nothing to get Crabby About - We went from the land to the sea with our next order - the crab salad. With hints of Yuzu (Japanese lemon) throughout the dish, it was perfectly balanced and unbelievably bright and fresh. The crab is so flavorful, and is certainly the star of the dish as it perfectly rests upon a wonderful supporting role - a flaky, delicate roll with hemp seeds on top.

 Fresh Fish: We were spoiled with the halibut for the fresh fish entree complimented by an elevated version of corn. It was so fresh and light, yet abundantly satisfying. 

 French Pizza: Chef Nick made the brilliant decision to use a delicious French cheese, so creamy, soft and decadent - the flavor packed a punch.

“Normally the Pissaladière is made with caramelized onions and anchovies - but not everyone is a full on foodie in the mall, so I wanted it to be more of a crowd pleaser. I used one of my personal favorite cheeses and like to incorporate it into the menu in some way,” says Chef Nick.

 In addition, he topped it with Opal basil, regular basil and pickled onions to kick up the flavor even more. 

 Overall, it was a 10/10 experience, if rating was even possible and we can’t wait to return to continue trying more incredible menu items. We were too satisfied to try any dessert this time, but were enchanted by the Bazooka gum that was served at the end of the meal, paying homage to the joys of childhood. There’s nothing like embracing a bit of nostalgia at the end of an exceptional meal.
